Featured Recipe: Zucchini & Corn Patties (Non-GMO, Vegan)
If you’re into Mexican flare, you will love these non-GMO, organic patties with the smoky & spicy dipping sauce!
Servings: 15 1/4 Cup - Patties
Ingredients
Patties:
- 3 Organic Zucchini (Large)
- 3 Cobs Organic Corn (Sliced off the cobs)
- 1.5 Cup Organic Corn Flour
- 0.5 Cup Organic Cornmeal
- 1 Cup Organic Onions (Diced)
- 1 tbsp Cloves Organic Garlic (Minced)
- Sea Salt
- Black Pepper (To Taste)
- 0.25 Cup "Sarafino" Extra Virgin Olive Oil
- 1 tbsp “Frontier” Chili Powder
- 2 tbsp Organic Flax Meal
Sauce:
- 1 Cup “Follow Your Heart” Grapeseed Vegenaise
- 1 tbsp Smoked Paprika
- 1 tbsp Organic Lime Juice
- Onion Powder
- tsp Garlic Powder
- 0.5 tbsp “Simply Natural” Sriracha
Instructions
- Combine all sauce ingredients in a blender until smooth and set into refrigerator.
- In a large pan, over medium heat, sauté in olive oil - zucchini, onions, garlic, corn, chili powder, salt and pepper for 5-7 minutes.
- Transfer into a bowl, add the remaining “Patties” ingredients and mix thoroughly.
- Form into 15 patties using a ¼ cup measuring cup.
- Pan fry over medium heat for 5 minutes on each side in olive oil; or bake for 30 minutes at 375F, flipping halfway through.
- Serve with the smoky sauce and enjoy hot as a snack or appetizer.
