Ingredients

  • 1 Bag “Rizopia” Organic Brown Rice Pasta Elbows
  • 1 Jar “Nature’s Emporium” Pizza Sauce
  • 1 Pack Earthbound Farm Organic Baby Spinach
  • 0.5 Cup Organic Fresh Basil
  • 0.5 Pack “Yves” Pepperoni (120g)

"Cheese" Sauce

  • 1 Pack “Daiya” Cheddar Cheese Shreds (227g)
  • 3 Cups “So Delicious” Coconut Beverage (Unsweetened)
  • 0.25 Cup Nutritional Yeast
  • 1 tbsp "Simply Organic" Garlic Powder
  • 1 tbsp “Frontier” Onion Powder
  • 1 tbsp Oregano
  • 0.25 Cup "Sarafino" Extra Virgin Olive Oil
  • Sea Salt (To Taste)

Instructions

  • Cook the pasta elbows in salted simmering water for 8-10 minutes or until al dente. Rinse with cold water to stop the cooking process and set aside.
  • Preheat your oven to 375F.
  • In a medium saucepan combine all of the “Cheese Sauce” ingredients except Daiya and bring to a boil.
  • Whisk in Daiya cheddar into boiling liquid until fully melted and combined.
  • Combine cheese sauce with cooked pasta and place in a parchment lined baking dish.
  • Top with tomato sauce and vegan pepperoni and bake for 15 minutes.
  • Broil for additional 5 minutes to crisp the pepperoni and serve with a drizzle of olive oil and fresh basil shreds.
