Featured Recipe: Superfood Peanut Butter Chocolate Banana Pops (Vegan)
Layers of banana and peanut butter, cloaked in vegan chocolate, rolled in nutrient packed superfoods will make any kid or parent happy!
Servings: 8 Pops
Ingredients
Pops:
- 4 Fresh Organic, Fairtrade Bananas
- 1 Cup Organic Peanut Butter (Peanuts Only)
- 8 Popsicle Sticks or Skewers
Ganache:
- 1.5 Cups “Enjoy Life” Chocolate Chips
- 0.33 Cup "Almond Breeze" Almond Milk (Unsweetened)
- 0.25 tsp "Organic Traditions" Vanilla Bean Powder
- Pinch of Sea Salt
Toppings:
- 0.25 Cup Organic Shredded Coconut
- 0.25 Cup Hemp Seeds
- 0.25 Cup Organic Slivered Almonds
- 0.25 Cup Organic Peanuts
- 0.25 Cup Raw Cacao Nibs
- 0.25 Cup Goji Berries
- 0.25 Cup Vegan Gummy Bears
- 0.25 Cup Organic Chia Seeds
Instructions
- Begin by slicing your bananas into 2cm thick rounds and layering them onto your Popsicle sticks, alternating between banana slices and peanut butter. Each pop should consist of one half banana.
- Place assembled pops onto a parchment lined freezer dish and freeze for 2-3 hours.
- In a double boiler, melt your chocolate chips and combine with the remaining ganache ingredients.
- Dip each of the frozen banana and peanut butter pops into the ganache and sprinkle with/roll into each of the toppings right away, before the chocolate hardens.
- Place back onto your parchment lined freezer dish and allow to set in the freezer for 20-30 minutes before consuming.
