Featured Recipe: Hazelnut Nanaimo Bars (Diabetic Friendly, Vegan)
With only 2g of sugar per serving and no flavour compromise, you’re in for a treat with these decadent vegan nanaimo bars!
Servings: 48 Bars
Ingredients
Crust:
- 2 Cups Organic Hazelnut Flour
- 0.25 Cup Raw Coconut Nectar
- 2 Cups Organic Shredded Coconut
- 0.25 Cup Cacao Butter (Melted)
Filling:
- 1 Can “Thai Kitchen” Organic Coconut Milk
- 0.5 Cup Organic Virgin Coconut Oil (Melted)
- 1 Cup Cashews
- 0.5 Cup “Nature’s Hollow” Sugar-Free Maple Flavoured Syrup
- 0.5 Cup “Xyla” Xylitol
- 0.5 tsp "Organic Traditions" Vanilla Bean Powder
- Pinch of Sea Salt
Chocolate Top:
- 1 Jar “Organic Traditions” Hazelnut Butter (180g)
- 0.33 Cup Raw Cacao Powder
- 0.5 Cup Cacao Butter (Melted)
- 0.25 Cup “Nature’s Hollow” Sugar-Free Maple Flavoured Syrup
- 0.25 Cup “Xyla” Xylitol
- 0.25 Cup Coconut Beverage (Unsweetened)
- 1 tbsp “Blue Mountain Organics” Sunflower Lecithin
- 0.5 tbsp "Simply Organic" Vanilla Extract
- Pinch of Sea Salt
Instructions
- In a food processor, combine all of the crust ingredients and press into a parchment lined casserole dish.
- In a blender combine all of the filling ingredients, pour on top of the crust and allow to set in the fridge for at least 1 hour.
- In a food processor or bowl, mix together all of the chocolate top ingredients and pour over the solidified filling layer.
- Allow to set for another hour or ideally overnight.
- Cut into desired size pieces and enjoy!
