Featured Recipe: Broccoli & Cheddar Tots (Gluten Free, Vegan)
A healthier alternative to the traditional fried tater tots – full of minerals, Vitamin D, beta carotene and dietary fiber!

Ingredients
- 1.5 kg Organic Russet Potatoes (Peeled, Grated)
- 2 Large Heads Organic Broccoli (Grated)
- 1 Pack “Daiya” Cheddar Shreds (227g)
- 0.5 Cup “Bob’s Red Mill” All Purpose Gluten Free Flour
- 0.5 Cup “So Delicious” Coconut Beverage
- "Redmond's Real" Sea Salt (To Taste)
- 0.25 Cup "Sarafino" Extra Virgin Olive Oil
- “Frontier” Black Pepper (To Taste)
Instructions
- Preheat the oven to 375F
- Combine all of the ingredients in a large mixing bowl, form into tots and place on a parchment lined baking sheet.
- Bake for 1 hour, rotating the tray halfway through to ensure even bake.
- Allow to rest for 10 minutes.
- Enjoy dipped in organic ketchup or on their own!
