Featured Recipe: Peanut Butter Cup Protein Bars
A tasty way to boost your protein intake for the day in the form of peanut butter and chocolate!
Servings: 18 Bars
Ingredients
- 1 Cup Peanut Butter
- 3 Packs “Garden of Life” Vanilla Protein Powder
- 1 Cup “Lundberg” Brown Rice Syrup
- 4 Cups Puffed Rice
- 1.25 Cups “Enjoy Life” Chocolate Chips
- 1 tsp “Flavorganics” Vanilla Extract
- 0.5 tsp Sea Salt
Instructions
- Pre heat your oven to 375F.
- In a food processor, combine all of the ingredients except for puffed rice and chocolate chips.
- Transfer the mix into a bowl and hand mix the puffed rice and ¼ cup chocolate chips until well combined.
- Spread the mix onto a parchment lined baking sheet and bake at 375F for 10 minutes.
- Melt the remaining 1 cup of chocolate chips over a double boiler
- Allow the bars to slightly cool for 30 minutes and top with melted chocolate.
- Place in a refrigerator to cool completely for 2-3 hours.
- Cut into bar shapes and enjoy any time of the day!
