Peanut-Sesame Kale Salad
This Asian inspired fusion salad features an array of nutrients for whole body health and wellbeing, ranging from vitamins and minerals to fiber and antioxidants.

Ingredients
Salad:
- 2 Small Bunches Organic Kale Chopped
 - 1 Large Carrot Julienne or Grated
 - 4 Stalks Organic Green Onions Sliced on the Bias
 - 1 Large Organic Red Pepper Diced
 - 2 Mineola Oranges Segmented
 - ¼ Cup Organic White Sesame Seeds Toasted
 
Dressing:
- ½ Cup Organic Peanut Butter
 - ¼ Cup Seasoned Rice Vinegar
 - 2 tbsp “Eden” Mirin
 - Smoked Sea Salt & Black Pepper to Taste
 - 1 tbsp Organic Toasted Sesame Oil
 - 2 Cloves Organic Garlic Minced
 - 2 cm Piece Organic Ginger Minced
 
Instructions
- Mix all of the prepared salad ingredients in a large bowl.
 - In a high speed blender, combine all of the dressing ingredients, pour over the salad and mix well just prior to serving.
