Featured Recipe: Sweet Potato Gratin (Gluten Free, Vegan)

Ingredients
- 4 Medium Organic Sweet Potatoes (Sliced Thinly)
- 2 tbsp Organic Chives (minced - for decoration)
Sauce
- 0.5 Medium Organic Onion (roughly chopped)
- 3 Cloves Organic Garlic (peeled)
- 1 Large Organic Red Pepper (Stemmed, Seeded)
- 1 Cup Organic Cashews
- 0.25 Cup Nutritional Yeast
- 1 tbsp Smoked Paprika
- 0.25 tsp Black Pepper
- Sea Salt to taste
Instructions
- Blend all of the sauce ingredients in a blender until smooth
- Using a mandolin, slice the sweet potatoes thinly.
- In a baking dish, layer sweet potatoes and sauce until all of the ingredients are used up.
- Bake at 370F for 1 hour, or until sweet potatoes are soft and the top is golden brown.
- Sprinkle the gratin with fresh chives and serve while hot.
