Featured Recipe: “Happy Birds” Macaroons
A fun way to dress up these raw vegan coconut macaroons and get the kids involved in making them!

Ingredients
Macaroons
- 3 Cups Unsweetened Shredded Coconut
- 1 Cup Raw Cashews
- 0.25 Cup “Maison Orphée” Extra Virgin Coconut Oil (Melted)
- 0.5 Cup "Madhava" Raw Agave Nectar
- 1 tsp "Organic Traditions" Vanilla Bean Powder
- 1 Pinch Sea Salt
Decorations
- 20 Pcs Pecan Halves
- 20 Pcs Dried Currants
- 30 Pcs “Mum’s Original” Goji Berries
- 10 Pcs Whole Almonds
Instructions
- Process your coconut, cashews, vanilla powder and salt in a food processor until smooth.
- Add the melted coconut oil and agave and process until well combined
- Using an ice cream scoop, form 10 macaroons and set aside on a parchment lined tray.
- Use the pecan halves for the feet, dried currants for the eyes, almonds for the beaks and goji berries for the wattles.
