Vegan, Organic, Dairy-Free Cornbread Stuffing (Non GMO)

A non-gmo, vegan-friendly, cornbread spin on the classic thanksgiving stuffing - rich in fiber and healthy fats.

Ingredients

Corn Bread:

  • 2 Cups Organic Corn Meal
  • 1 Cup Organic White Corn Flour
  • 1 Cup Organic Whole Wheat Flour
  • ¼ Cup Organic Flax Meal
  • 2 Cups Carbonated Mineral Water
  • ½ Cup “Nutiva” Coconut Oil Buttery Flavour - Melted
  • Sea Salt to Taste

Stuffing:

  • 2 Medium Organic Onions Diced
  • 4 Cloves Organic Garlic Minced
  • 2 tbsp Organic Rosemary Minced
  • 1 Cup Organic Dried Cranberries
  • 2 Cups Organic Walnuts Chopped
  • ¼ Cup Coconut Oil Buttery Flavour
  • Sea Salt to Taste
  • Black Pepper to Taste
  • 3-4 Cups Vegetable Stock

Instructions

  • Preheat your oven to 375F.
  • Combine all corn bread ingredients in a bowl and pour into a parchment lined baking dish.
  • Bake for 30-40 mins or until a toothpick comes out clean.
  • Saute all stuffing ingredients for 10-15 minutes over medium heat, stirring frequently, adding the vegetable stock in the last 5 minutes.
  • Crumble the cornbread into a bowl and combine with the stuffing ingredients.
  • Serve warm as a side to your thanksgiving dinner.
