Shrimp Burrito
4"Indian Life" Wraps
1/2lbCooked Cleaned Shrimp
1/2Avocado sliced
1/2Mango sliced
1Red Pepper sliced
1tbsHot Sauce
1tspAvocado Oil
1/4cupCilantro Microgreens
1tbsGarlic Flowers
2Green Onions chopped
1tspApple Cider Vinegar
2tspBlack Pepper
Pinch of Himalayan Sea Salt
Coconut Yogurt Dip
1/2cupCoconut Yogurt Unsweetened
1tbsGarlic Flowers
1tspTurmeric
1tbsBlack Pepper
2tbsGreen Onions Finely Chopped
1tbsDried Oregano
1/2tspHimalayan sea salt
2tbsHot Sauce
Instructions
Slice shrimp down the center and place into a bowl. Add green onions, avocado oil, garlic flowers, hot sauce, cilantro microgreens, sea salt and pepper to shrimp and mix well. Allow shrimp to marinate.
Place sliced mango and red pepper into bowl add vinegar, olive oil and sea salt and mix well.
In a bowl mix all indigents for yogurt dip.
Place sliced avocado into center of wrap, with red peppers and mango beside avocado and place desired amount of shrimp mixture on the other side. Fold burrito and roll tightly, folding in both ends and continuing to roll. Place some yogurt dip at the end of burrito to seal it. Slice Burrito down the center on a angle. Plate with yogurt dipping sauce on the side.
